Cool things down with this month's recipe from the Geiser Grand Hotel, located in the town of Baker City. CHERRIES IN THE SNOW
- 6 cups 2 percent milk
- ¾ cup risotto rice
- ¾ cup Splenda
- 2 ounces dried cherries (preferably from Oregon's Hood River Valley)
- 1 ounce dark rum
Soak cherries in rum.
Mix rice, milk and splenda. Boil and steam for 1 hour and 15 minutes. Add soaked cherries and rum. Refrigerate for 6 hours, or overnight. Add 1 cup Cool Whip. Top with cinnamon.
